Easy mode is not easy, the way they've implemented it is best to think of it like easy mode is where you aren't forced to overlevel. Normal is like playing Nioh 2 at recommended level but not being able to upgrade your gear during a region and even when you do, it's the shittest gear of the last region and a weapon you might not be best with might be needed for a boss.
I got to and beat the fifth boss on normal mode, it is beyond exceptionally difficult if you don't intend to over level, and I hate doing that, there's a need to dump stats into off build categories like strength to get the weight rating down while already making some form of Stanima boosting a must have stat as well as vitality being vital, the insane health pools of enemies and bosses, a stanima damage meter that protects a bosses health pool that needs to be depleted to stagger and do real damage and needing to build for that or have it last for ever and the inverse for you, the boss battle become insane where you need to make as few mistakes as possible while fighting a battle of attrition. Combine that with elemental status effects that build up and do chip damage even through guardng or a perfect parry it's just diabolical, albeit there is really good telegraphing of that status effect attacks. To say normal mode here on reccomended level is the most difficult in the genre is an understatement.
That said, I missed a "mechanic" until late in the game which may have changed my view on this but slightly, it was in the skill tree as an unlockable and I think it was what brought the difficulty back down for me towards the end... but I doubt it, maybe the elite enemies in the levels but not on the bosses for sure and defiantly not on the bosses with second phases as the window for these special parrys narrows as the boss rages.
I'll be retrying the end game boss on normal before I restart a NG to get the trophy for it, to see if it's possible tomorrow so I'll see then for sure, I'm not confident.
