Why do Soulslike/FromSoft clones never come close?

Are these as good as the best From Software games? No. But keep in mind From Software has a veritable genius at the helm in Hidetaka Miyazaki.

Nine Sols is the only one on this list I would say reaches FromSoft levels. Hollow knights touch damage is nonsense and Salt and Santury is way too stiff. Nine Sols though is brilliant.
