Yeah, I always heard really good things about Ni No Kuni, I tried Ni No Kuni 2 to no success for me but I understand the first has the monster system which sets it apart. I don't know much about the rest but I know enough to agree with the OP, we do need one to modernise and mature a game like Pokemon.
Also, MGS5 TPP is technically a monster hunting game as you kidnap enemies and turn them to do your bidding. Easily the best and most quality monster hunting game as this is the main loop of the game that got me playing to near 700 hours.
