It's doubtful that there are big differences in costs between the Switch and Vita when it comes to screens and batteries.

Switch: 6.2" 1280x720 display, 4,310mah.
Vita: 5" 960x544 display, 2210mah.
Big differences there.

Regardless of what you think of the Joy-Cons, you'd have to buy a Switch Pro Controller which has the same HD rumble, motion and an independent battery; you'd save nothing of significance there.

False.
You only need half the amount of stuff as it's only 1 controller, not two.
That means only 1x HD rumble, independent battery etc'.

The dock is a piece of plastic with USB slots, HDMI Out and a connector for the power supply; all these things would move onto the redesigned home-only console, so the only cost savings would be on the piece of plastic. There's no "And more."

False. There is circuitry.
It takes the signal from USB C and splits it to HDMI and USB, plus routes some power delivery.
There is some DRM and chip negotiation going on there in order to curb piracy and allow for seamless transitions between portable and docked modes.

Realistically, you wouldn't see more than a $50 reduction on such a hypothetical redesign. Additionally, chances are that you'd demand an HDD to be included, so that makes it all the more unlikely that the device would be more than $50 cheaper than the regular Switch.

You are basically throwing half the switch away and $50 savings is all you think it would bring? Regardless. It's your opinion, you are entitled to it.
And no. They would not be forced to include a Hard Drive.
