I've played several racing games and enjoyed most of them, but only one is just constantly, incredibly fun no matter how many times I play it.

That's Mario Kart wii alone, Mario Kart 8 is not like that.
Gran Turismo, with a tie for 2nd between Wipeout & F-Zero.
GT for a more realstic, chill, driving experience.
The other two for a frantic time.
Surprised Ridge isn't getting many votes. For me it hits the sweet spot between arcade and sim
Easily Mario Kart for me. It was the first race that brought something entirely different to the genre. Kart racing became so much more fun.
