I would say they will make a new series with a new main character. So either they will go for new gods or a new spin on the same ones. Personally I hope for something out of Norse mythology between Hel, Loki, Thor, Odin, Baldur etc.

The Roman pantheon is the Greek pantheon, with some tweaked names.
Kratos attacking another pantheon would be a complete story-destroyer. How can there be more than one group of tyrannical individuals who rule the world? And he can't very well attack a human army after destroying a pantheon of gods, and presumably Titans, can he?

I think at the end of GoW III kratos will blast off into space after finishing the fight, the ship he rode on will be blown in half.
Kratos' half will not make the slip-space jump, thus forcing him into cryo-sleep. The next game, will take place before GoW 1 and you will play as a new squad of spartans. ;)
I predict a "God of Console War" spinoff with a green space marine as final boss.
After destroying every form of god then he returns for a final battle with Guts...
Next? God Of War 0. Prequels are required, after a certain number of sequels, everybody knows that.

Norse mythology is the perfect choice, even better than the Greek one for a GOW style game.
