FF VIII. I just never before felt the immersion I felt when I played that game. I really loved the whole package. I enjoyed the gameplay, cut scenes and found the characters and story fascinating.
Zelda OoT and Xenogears.... enough said.
If it isn't turnbased it isn't worth playing (mostly)

If this is one of those if you could only play one game forever, itd be TimeSplitters 2. Replay value is awesome. A shame that TS4 may never ever happen.
But overall my favorite game that I've played thus far, Zelda: Ocarina of Time
I'm torn between Diablo II and Unreal Tournament 2004. Ridiculous amounts of time spent on each.
My game I could play forever favourite is Mario Kart...
I couldn't give you my all time favourite game though, I'm hoping I'll be able to by the end of this generation though
