Sony are primarily a hardware company, so its unlikely to say the least.

But if they did want to...

 - the PS3 would be their last console.
 - they would spin off a new "game publishing division" - to work with other console manufacturers
 - they would more than likely go "cross-platform", and support everything.

I think its more interesting to consider what would happen, if MS dropped out of the console race (360 was their last console).

Microsoft did offer to buy Nintendo at some point - if the shareholders had agreed, it's not impossible Nintendo could have been taken over. Similarly if Sony put up enough money they could buy Nintendo - unfortunately the value of Nintendo's total shares is far higher than Sony's total value.
