Halo: Combat Evolved is definitely one of them, so are BioShock, Half Life and of course Doom. And Goldeneye 007 and Perfect Dark.

None of the COD games come close.

Counter-Strike.
It might have crappy graphics by today's standards, but overall its gameplay is my favorite (on defuse maps, hostage rescue maps are terrible).
