Third person you can 'see' your character and get a broader FOV of what's around you, however you lose immersion and play the game with a view similar to a movie which IMO distances you a little from the game (although the benefit is you get to see your character and bond with them as you would a movie character).
First person your FOV is narrower but its more immersive and you are much more there. You lose constant sight of your character though and unless the game is strong on this its easy to lose any sense of connection (you become a bodiless gun in a sense).
As I rate immersion very highly - for example in Dead Space (which is very good nonetheless) you're watching monsters attack your Avatar, whereas in Fear you are being directly attacked by monsters coming right at your FP FOV - I prefer FPS, others don't as they like better FOV, etc.
Mostly both are indeed shooters.
