1) Nintendo couldn't predict that their console would be the fastest selling console in history. They may be profit rich but they're not resource rich.
2) Wiifit and SSBB are continuing to sell well. I doubt that simultaneous launches would have produced more sells. People are going to buy them eventually if they wanted to in the first place.
3) Nintendo is giving the holidays to Third-Party developers. My best guess is that there will definitely be titles in the future but they're going to either use MotionPlus, which isn't out til Spring, or they still in development. At least there's Wario Land: Shake It, Kirby Superstar Ultra and others to look foward to from here to January.

It's also an assumtion based on a business decision that could have possibly led to the Wii being the next Gamecube. Second guessing Nintendo in the business arena has never proven lucrative.

NES was a fad that took the world by storm, selling 60 million units right after the video game crash. Super Nintendo went on to sell 20 million less, a larger portion of that (as well as Sega Genesis) being to a younger demographic as many older, casual gamers who owned a Nintendo didn't go on to the next generation.
