Aside from drifting, try driving straight without swerving much because that really lowers your top speed

Only move out of the way to avoid projectiles and bananas, but if you can see it coming, try avoiding them ahead of time so you don't have to make a quick turn

Try driving without AI assisted driving against coms at 50cc to practice before getting to the higher speeds

1.) Always drift around corners. You should never try to turn more than like 30 degrees without drifting. Turning without drifting should be for making small adjustments only.
2.) Hug corners tightly. Racing is all about taking the shortest path. Take the insides of every turn.
3.) Those boost panels in Mario Kart Stadium are a beginner's trap. Sure, you get a temporary increase in speed, but you end up taking a much worse racing line because they're on the outside of the corner.
4.) When you have boosting items like stars or mushrooms, use them to go off-road and cut corners, if you can.
5.) The boost at the beginning is triggered by starting to hold A in the middle of the countdown, during 2. Like, right in the middle of 2's appearance.

As for characters, there's not really any "best combo", since there are always trade-offs in your stats. If you're getting hit a lot, prioritize acceleration, if you're not good at turning/drifting preemptively, take handling, etc.

Already said everthing I would also say.

 

For character, you should keep the weight in mind, heavy and big characters can push lighter driver away while driving in to them. If you go for a fast driver, you have to sacrafice accelaration, so everytime you get hit or slow down, you need longer to reach your speed. So, most experienced driver will take this one if you want to get the best time. I play as a light character most of the time for these kind of races which has really good handling and grip for taking tight curves very easily. I also can go back on track really fast after being hit, because of accelaration.. Drifting is key for me.

You can also try bikes with great handling. I was always faster with bikes than carts. Bikes in generally steer sharper and it's easier to make really tight turns with bikes. Just go from the outside to the inside of the corner and than baci to the outside so you have a small boost after the drift.

You may find bikes work for your driving style better. And maybe a medium-weight character.

Don't spam your items as soon as you get them, use them strategically.
