I have to agree with you for the most part. A lack of these features actually makes their online play not fun for me. I only like Smash Bros U online and it's really addicting.
The DS days were different. Mario Kart and Metroid Prime Hunters were amazing games. I have well over 100, if not closer to 200 hours logged into Metroid Prime hunters. That game had menu voice chat in custom games. It was such a good game and it was Nintendo's best functioning online game to date.
Nintendo still makes fantastic games, I could only imagine how good they would be if they were up to par with the current games. Nintendo is severely lacking on various "forms of fun" that Sony and Microsoft are offering. Nintendo still overs a lot, and different "forms of fun" than the competition, but they are using far less diversity of "forms of fun". Nintendo has the last one nailed hard.
Point is. Nintendo isn't just lagging behind on the spec factor, but also on the fun form factor. Most people here will disagree, as will a lot of the internet. However, if you walk into a game store or a Wal-Mart, target, best buy etc. You'll find a lot of people saying that they don't find Nintendo games fun these days. As most of them are lacking diversity. Too much innovation with their hardware, very little diversity between titles of their main IP's. Mario still feels like Mario etc. The Game Cube days really shook things up.

And all of these people willing to just swallow whatever Nintendo gives them is the exact reason the NX is going to fail. Why the Wii U failed. You can't just let Nintendo skirt by on the bare minimum of features (and power, for that matter) and then not get why the mainstream gamers don't give a crap about buying the newest Nintendo system. Keep it up and Nintendo will be going solely mobile and/or 3rd party.
To the OP, well that's your right as a consumer. If you don't like something or it doesn't meet your needs, then by all means don't buy it. That's the wonderful thing about choice. It's your hard earned money, you can spend it how you please.

Starting to agree more and more.

It is rumored that NX will be a home/handheld fusion. How does PS Vita handle voice chat? Do Vita players use it in public places?
The Wii U allows you to video chat with complete strangers, yet you can't even voice chat with friends in Splatoon not even in the waiting area like in Mario Kart and Smash. Doesn't make any sense, hopefully they'll fix with NX if only for logic's sake, but whether they do or not has no impact on me buying one. You still bought a Wii U despite these problems afterall so I'm sure you can do the same for the NX.
I strongly disagree. I buy Nintendo consoles for Nintendo games, I will definitely not skip all those great games only if game dont have voice chat.

Wii U failed because terrible and misunderstood marketing, high price compared to competition, very weak and very small number of launch and 1st year lineup, software droughts...those are main reasons why Wii U failed not beacuse Wii U games didnt have voice chat or gameplay recording..
Nah, screw dat. I don't need or want another PS4. I already got one of those. Nintendo shall do whatever the heck they like and I hope it's something completely different. I'm getting bored of my PS4 quite frankly and I'm very much looking forward to NX to finally have some fun again with my favourite hobby.
Also, fuck online gaming.
