Who really cares? If you personally want to play that game mode then buy a Ganondorf amiibo (it's not that expensive), if not then move on. It really isn't a big deal and there still is a hero mode anyway.

You can't be sure of that, maybe they would have included that for free without amiibo. You simply can't make the assumption that it was in the game because of amiibo

Nintendo is essentially making Day One, On Disc DLC now. Yeah, the key is a plastic toy but the mechanics of it are the same. The DLC is being planned and programmed before the games are being released. The intention is to make people spend more money on a game than they normally would. Yes, this is the same philosophy EA recently talked about and that many people criticized.
If you're bashing all other instances of Day One/On Disc DLC while defending the Amiibo strategy then, as far as I can see, that's straight-up hypocrisy.

A bad precedent for sure. And it will probably get worse with NX.

Link gives you arrows
Zelda gives you hearts
Ganon gives you damage.
It makes absolute perfect sense. And tell me, how the hell would be the Zelda and Link amiibo functionality translated into the game without amiibos? It would be pretty dumb to press a button to have more arrows or hearts just because, dont you think? Of course it is, because this would have not existed without amiibo, we can all agree with that right? Then why is Ganon any different? in the moment you tap it, it gives you more enemy damage, just as link gives you arrows, they needed to think in something for every amiibo of the triforce and they came with that for Ganon. This would not exists otherways.

But the biggest offender of Amiibo has to do with Nintendo's latest Zelda remaster. And I'm not upset about the Wolf-Link amiibo functionality. I'm upset about another Amiibo locking a funadmental part of the game. The Ganondorf Amiibo:

Let me see if I'm understanding correctly.
You're upset because they added features to a game (Mario Party 10) that wouldn't have existed if not for Amiibo, specifically to give amiibo more functionality, because it means you don't automatically get access to that mode?
And you're upset because an amiibo unlocks a tiny bit of code that basically just says "double the amount of damage taken" for all damage, a bit of code that took little if any work to add, but that they only thought to add because of the amiibo?
The problem with on-disc dlc is that the content was ready for launch, but they only gave you access to it through an online shop. That locks out people who don't have an internet connection, as well as future access to the content once the shop servers go down. Amiibo has neither of these problems. The point of paid dlc is to provide people with additional content developed after launch (or rather, after the game "goes gold").
Nintendo has been quite consistent with their attitude to amiibo - either the game unlocks little bonuses that are just little gifts for having the amiibo (eg/ Mario Kart 8 Mii outfits, free weapons/rupees/etc in Hyrule Warriors, Mario Maker's quick unlock of outfits, or Splatoon having a 'remix' version of the single player with a few little rewards that are just variations on existing weapons/clothes), the game has post-release dlc that is unlocked by amiibo (Hyrule Warriors spinner weapon), or the amiibo actually has a function built into the game (Smash Bros, Mario Party 10, Zelda Twilight Princess). In that last case, there is often additional functionality for an amiibo beyond the one that needs an amiibo to work as intended - so Wolf Link unlocks a special challenge dungeon thing, and also will store some data that will be usable with Zelda U, and Mario Party 10 has data that gets stored in the amiibo and also unlocks the extra game board content in the amiibo mode.
It would be different if they hid an actual story, basic mode, etc behind an amiibo (and no, Mario Party 10's special mode isn't a 'basic mode' - it functions the same as the regular party mode, except for the semi-customisable board). But Nintendo has yet to do that, to my knowledge.
And you can bet that Nintendo will start releasing Amiibo Cards of many of the characters that unlock things in various games, for a fraction of the cost of an amiibo figure - they're just not in a rush to do so, since it'll eat into the profitability of amiibo.

Yes, when you break it down, Amiibo is locking content away on-disc. There are some differences: you get a figure with it and some Amiibo can be shared. The Splatoon Amiibo for example can be shared between friends.
With respect to Twilight Princess, I don't find content locked away particularly objectionable. I've played the original game years ago, I know what content should be on it from the beginning and I know what content has been added. When you think about it, that's what's objectionable about content being locked on-disc: the fear that a once complete game is cut up so that you're now paying a base price for an incomplete game and paying again to make your game complete.
I can do without the Ganondorf amiibo, I don't care about 4x damage. If I wanted the challenge, I'd just collect half the heart containers or reset my game every time I fall below 3/4 my total health. And the Wolf-Midna Amiibo? You best believe I'm getting that. I want the new dungeon and I love the figure.
