I even don´t remember, but probably something from the PS2-GC-Xbox era....... Okami, I believe.

Do unreleased games count? Because Cuphead just looks soooo good.
Other than that Yoshis Woolly World always blows me away with cuteness and attention to detail in the art design, like the the little fuzzy glow the Yoshis have around them from the wool fibers sticking out.
I also loved Rayman Ledgends and Child of Light as well as the initial Zelda U reveal.
I tend to be more blown away by interesting art design rather than pure technical capability (even though that certainly plays into it) so I can't really remember the last time a game with 'realistic' graphics blew my mind. I did think Star Wars Battlefront is pretty, but I'm not really blown away by it.

The Witcher 3 and The Banner Saga the year before.

It will probably sound wack but it was in Captain Toad actually, the stage where the Goombas were floating in the water.

found a pic of it http://themushroomkingdom.net/images/ss/cttt/6.jpg

The last game was Uncharted 4, and it still hasn't released yet.

this:

Is mindblowing. Its basically pixar level of graphics in a game.

If we're talking strictly about graphics, then it's The Witcher 3.

But I become desensitized to good graphics after a few hours, especially on open world games that have environments with virtually similar colour palettes.

I'd still argue that good visials are part of the experience, because you know... video games are mostly a visual medium.
