To throw a few more out there. Hyrule Warriors 2 and Lego City 2?

I'm not including sequels to games the Wii U already has, unless we have specific evidence to believe that they are coming.

Do we have specific evidence to believe that anything is incoming?

Wario Land U

Pokemon Snap U

I really only want Paper Mario. Please!

We do for Pokken Tournament.

Amiibo Universe for Wii U + 3DS (coming October 2015)
Metroid U
Diddy Kong Racing U
Hyrule Warriors 2 (will also be on next-gen Nintendo portable)
Pokken Fighters (not officially announced yet right?)
Generic Mario Sports Game
Paper Mario U
Splatoon DLC Expansion

Are my guesses, that will pad out Nintendo's 2016 lineup for Wii U.

Animal Crossing and Mario Galaxy 3 (or whatever the next 3D Mario) are for the next-gen Nintendo portable launch window IMO (sorry Wii U).

I will also guess Punch-Out! 3D for the 3DS this fall from Next Level Games. That will help fill out the 3DS lineup. Makes a lot of sense for the 3DS too, Punch-Out is a series that is tailor made for a 3D screen.

I agree with you on 3D Mario, but I can't see Animal Crossing skipping a system.  As for Pokken, yes, we have not yet heard it be officially announced for Wii U, only arcades.

I think Pokken and Animal Crossing will be the biggest 2016 titles, and I think a Metroid will be released next year, but maybe for 3DS.

Animal Crossing, count on it.

Wouldn't be surprised if we got Diddy Kong Racing 2 and/or a Pokken Tournament port either.

Everybody forgot, but... Luigi's Mansion 3. I think it is possible.

A wildcard tho: a new Kid Icarus.

Bet with Teeqoz for 2 weeks of avatar and sig control that Super Mario Odyssey would ship more than 7m on its first 2 months. The game shipped 9.07m, so I won

I would love new Kid Icarus but I think it depends on Sakurai.

I think Next Level Games is working on two games right now --

Punch-Out 3D! for the 3DS (to be unveiled at E3, releasing this holiday)

and

Luigi's Mansion 3 for the next-gen Nintendo portable (2016 or 2017 release).

I think they earned enough trust from Nintendo to get to work on two games instead of just one Nintendo project at a time.
