Good for you. I don't care, so go ahead and make games 1 billion fps for all I care. I do take exception to your attempt to relate the discussion to your example. It's not a case of people contiously selecting an inferior experience, it's about not being able to see the difference at a certain point and at that point the gains are not worth the trade off. You also incorrectly imply that the difference between 30 fps and 60 fps is as big as the difference between living on $200K and $30K which is incorrect. Finally, you present the question as if there are no tradeoffs when increasing the framerate which is also completely false.

Even if you cant see the difference, wich you can, you can certainly feel it on the gameplay, wich you might not realise but it is there.
I can only think that people who say they see no difference really are just trying not to. Its just not possible not to notice a difference.

Human eye does not see in framerate it sees in light. Percieving framerate depends on how used a person is to experiencing that framerate.
Frames would be discrete, and on subatomic levels photons are discrete but as waves are eyes are picking them up contingously.

Well sure, but one doesn't taste, smell, touch, or hear Frames Per Second, so you have to see them when you sense them, don't you?
I can't tell whats 30fps or 60fps or inbewteen. But the instant it drops below 30...
