These games were tough as nails, it was impossible to breeze through them without dying constantly and learning from your mistakes and doing better next time. I get the impression you haven't played Donkey Kong Country's mine cart levels in a long time, because they are my clearest memory of "impossible to see coming trial and error game play" that I can think of in old school platforming. Hell, Donkey Kong Country Returns is one of the best examples of this sort of thing in MODERN games.
I played Sonic 2 just yesterday for an article dealing with this issue. I haven't gotten past Chemical Plant Zone in over a decade, and I was blindsided a grand total of two times through the rest of the game. There was a third occasion I used to be blindsided in Chemical Plant Zone, right before the boss area, that I remembered to avoid. It wasn't exactly a huge problem in the classic Sonic games unless you ran around like an idiot, like these guys were doing.
