I think the final boss was great, and it was really unexpected... Just what I'd expect :P

Yep.
I don't have any strong opinions about 3's final boss, though he isn't quite as epic as the others, and he's definitely easy when you only use rocks.
I actually think Titan Dweevil is pretty darn hard. Easier when you only use yellows, but even then it takes a lot of careful movements and patience. And if you decide to go at him the first time down rather than coming back with yellows later, it can be a nightmare. I'd say he's my favorite, followed by Plasm Wraith, then Emperor Bulblax. That guy didn't even have multiple elements as a theme. You just stuff him full of bombs and chuck everything at him when you get a chance. He gets points for just being so huge and intimidating though.

How long it takes has nothing to do with how easy or not something is.

I always have yellows in my party, but only as one of five colors. And trying to knock off each of those weapons with 20 yellows or less can be tough.
