Of course there is a difference, there is 125% more pixel information being displayed on screen.
Upscaling uses certain algorithms to guess some of that information (In a good scenario) and then apply certain filters to clean up the image.
Take the jump from 1080P to 1440P and you get another 77.7% increase in pixel information. Or take it a step farther to 1600P where it's 97.5%.
Or 4k which is a staggering 300%.
I don't care what review websites say, 720P and 1080P is last decade stuff and is very noticeable, just unfortunatly the majority of TV's around the world are only 720P, wish the industry moved onto 2k and 4k sooner rather than later.

Damn. I'm using the Super Slim PS3 I got on Black Friday and I'm using a newer HDTV. The PS3 games look better on my old TV. I guess the new TV isn't going to do the job. I never had this problem (or at least I never noticed) with my old PS3, though.

Some games decide to use some upscaling (the PS3 does have an upscaler after all) but it's not mandatory, so it's really up to the developer. It's pretty uncommon nowadays though. Maybe you have been playing lots of games in the past which made use of upscaling in some form.

What the TV displays in the upper right is the input (resolution, refresh, for TV and consoles; width, height for the PC).
So whenever it says 1080p or i (or 1920 x 1080 for the PC) the input matches the TV native resolution and you get the best picture quality.
I don't have a Ps3, but given the replies in this thread it seems some PS3 games refuse to run at 1080p, that's why the PS3 switches from 1080p to 720p. Those games will look better on your old TV if it isn't full HD.
Plasmas are a different beast, they do a much better job at upscaling, that's why everything looks awesome in Kekrot's TV (plus his plasma is a Panasonic).
I tried a lot of games. Uncharted 3, MGS4, MGS HD Collection, Valkyria Chronicles, God of War 3, Wipe Out HD Fury, Heavy Rain, and LBP 2. The results were all over the place.
Most of them said 720p but looked fantastic. MGS4 ran at 1080p and looked good. HD Collection said 1080p on the box but ran at 720p (wtf?). Uncharted 3 said 720p but looked good. The Last of Us said 720p but looks blurry. I'm more confused now than when I started.
I'll just give up and play my games.

In the PS3 display options have you tryd unticking all the boxes leaving 1080p as the only option? that might work
This is strange tho, cause their should be no difference in quality
Lewis, go video options, choose resolution and mark the 1080p box AND NOTHING ELSE => you done
