So how do the touchscreen- and back-touchpad (or whatever it's called) controls of Vita games function on this?

It is not.

"It will even let you play your PlayStation 4 via Remote Play with DualShock 4; this functionality will come later via system update."

They don't, which is why a lot of games that use them heavily aren't compatible with it.
