It would look the same. I don't see why you think it wouldn't. I mean the screen would be slightly washed out due to the nature of a projector, but other besides that there wouldn't be much of a difference.

if you would use illumiroom with a tv+projector the tv would be used to show the whole game as if you would only have a tv without illumiroom. kinect and the projector will be used to show extra stuff around this tv. something you wouldn't see even with a screen of 50x30 meters.
if you would only use a projector and no tv but still want this illumiroom experience this projector would have to show the same as the tv+projector combination with all the extra stuff illumiroom is known for. but to do that, you would have to split the picture of the projector.
if you have a 1980x1080 projector which has to show these 2 different informations it has to split in a section using the pixels in the middle for the normal game graphics and in a section using the pixels around this for the extra effects. the pixels in the middle would be maybe a section of 800x400 with a 1080p projector and much less with a 720p projector and all the pixels around that would have to be used for the extra effects like the radial wobble which you only see with illumiroom using kinect.
instead of playing the game in awesome 1980x1080 on a tv and having awesome extra effect around this screen you would play the game maybe in 800x400 and would have the extra effects around it. but only if it would be even possible to use only one projector to show the game and simulate the effects around it. not even sure about that...
