The only way I could see it working would be if there was some kind of handle attachment released for the tablet along with the game, allowing you to hold it like a shield. Perhaps said attachment could have its own analog stick to aid movement (think about a nunchuk connected to the bottom of the tablet, which also grips it from beneath, or a shield handle with an analog stick in the middle). Then combat sections could be about the Wiimote and nunchuck movement, in addition to using the screen on the shield to deflect attacks and/or display additional information, like some kind of visor mode in Metroid Prime, i.e. No use of the tablet's buttons or touch screen during these sections of the game.
Outside of combat the shield could then have other abilities which could rely on buttons/touchscreen etc, for puzzle solving, navigation, crafting and what-not...
Regarding Khuutra's comment, I took it as a reference to your remarks in the Zelda SS selling 20 million thread. Aonuma says in the interview here that they can't go back to buttons, only to say two questions later that he wants to take full advantage of the Wii U controller, thus contradicting himself.
