Why is God like this?

When God made us at His image, it means that we, in our human nature, are good, kind, compassionate, etc.

I honestly think you really have a bad view on God. He is our creator, He did create life. All He wants is for people to know of Him and people to love Him and one another - and this is where your view starts to go bad, with all due respect.
If it was about His ego, there wouldn`t be salvation for anyone - nor heaven for that matter. A God that cares for your heart and your life isn`t narcisistic or sadist. The word of God is spread so people can understand why goodness must prevail: prophets explain where we come from, why God cares about us and why we should follow Him. How different is following God? He honestly cares about you. He wants you to have a place in heaven next him.
Of course that those who truly are all those things you said to go to hell, IF, they don`t repent, IF they don`t believe (that is to say, follow/have faith) in God.
When people offer themselves for sacrifice is to redeem themselves from what they have done or to help those, for example, who have no one to pray for them.

If God didn`t care Jesus wouldn`t have even been born in the first place, God wouldn`t have sent apostles, there would have been no apparitions or miracles.

I don't really think pointing out contradictory stances from one's own religion is a way to successfully reason against the less palatable parts of one's religious materials. If statement A is contradicted by statement B, it doesn't falsify A, it just means the beliefs are incoherent, that is to say inconsistent.

But it is a common tactic none the less. If a scripture is quoted, even in religious debates between believers, all too often the rebuttle is just another scripture to contradict the first. This only works if the assumption is made before hand that the religious belief as a whole MUST be true, and then the contradiction can't be a contradiction, it can only be a misunderstanding to be ironed out.

But if that assumption is not made to begin with, then countering a true statement about the text or belief with another true statement about the text or belief only results in showing the inconsistency and incoherency of the text and belief. It doesn't somehow erase the first one.

The law covenant of the old testament is ridiculously slanted towards men, it's an abject patriarchy. Women are property to be bought and sold, polygamy is rampant and acceptable, and raped women are considered damaged goods.  In the new testament women are told to be in subjection to men, to be silent and never teach men or have authority over them. Going on to show some other scripture or part of the culture that "respects" women doesn't somehow erase the previous aspects that are true, and it only makes them "nuanced" if you assume they have to be of divine origin and infallible. Otherwise it only shows contradiction, the result of people fighting against an ugly tradition.

Why is God like this?

Often scriptures uses human emotions and well as  body parts when describing something about God. For example  God's eyes ,arms, hand yet He doesn't have actual eyes, arms and hands as He is a Spirit.

God personally judge Sodom and Gorrahah after

 1) the city were captured and ensalved

 2) Abraham with his servants went and defeat Chedorlsaomer and return all the goods to  these cities

 3)  Dealing with Abraham that God would spare the cities for 10 rightous people

 4) they tried to lay their hand on Lot  after the fact  he was the reason they were saved the begin with.

 Notice the judgement was not sentenced on these cities until they tried to lay their hand on Lot. Lot was the key between mercy or judgement as Lot and Abraham showed mercy on them.

 God is jealous over idols not because they are His equal (they are nothing) but how these gods effect the people.
