I'm with Angrypoolman in that they could of easily just made an original starfox game although this is a fair bit cheaper to do and easier to outsource. 

I think the remake in the case of Star Fox was a bit of a test. Testing the developer to see what they could do and testing the market to see if there are interest in the IP. Both seems to have succeeded. Im sure a brand new game in the franchise is in development. It might even have been for a while.

I don't like the testing the IP thing because there are plenty of core fans that simply don't want to replay the same game for the 3rd time lol. Although in Starfox's case its fair that they have a huge new audience from Switch and new generations who weren't gaming on the 3DS when that remake was released. The rayman Legends Remake is a bit more frustrating to me since that is on PS4/Switch and plays perfectly only PS5/Switch 2, as a Rayman/Platformer fan I'm just not interested in going back to legends despite wanting a new game in the series (3D ideally)... I'll give Nintendo a pass with StarFox as the last entries are stuck on the 3DS and Wii U.
