I want karts to race in, mountains to climb, caves to explore, but without major enemies or boss battles. I want to have to resource gather to increase my stamina and I want to upgrade shops to have better vehicles or items.

This is a genre that I think is poised for greatness and with just a bit of investment we could be in for a very fun, rewarding time.

No mans Sky has all that now as well as base building, Multiplayer, spaceship building, terrain manipulation and terraforming and loads more they just keep adding stuff in. Like hundreds or hours of content before you've seen it through. It's also very cosy in its ways, having to shelter from storms or just the UI sounds which are somewhat soothing and it's a game you can play while listening go your favourite cosy podcast to get multiple levels of cosiness going. 

If not this, Light No fires will do something similar with m9st of those features at launch and better production value in a more grounded, one planet that's more like Earth kinda way.
