So, as this thread turned into a fight about how good this compilation is, I give my impression. And it can be summarized as the good, the bad, the ugly.
The good: Whatever people say, three classic games remastered in HD, on a modern device, with updated control schemes, with slightly updated graphics (widescreen in two of them and a few texture upgrades) is a lot of value. That is why the Final Fantasy remasters all sold a lot too. That is why a lot of remasters sell at least decent (depending on how iconic the basic game was in the first place). Nobody who buys this collection is scammed or a Nintendrone or something. It is fine to like the collection. Which doesn't mean the bad stuff should be ignored.
The bad: Well, while the improvements are fine and dandy, it is easy to see how more could've been done. For starters: why is Galaxy 2 missing? The missing widescreen on Mario64 has probably technical issues (games back then there seriously fitted to the hardware). But clearly more work could've been done to improve textures. This is just enough work to not be shitty, but not much more. This is disappointing.
The ugly: And here we are at the point, that Nintendo does embrace all the shady shit that other gaming companies do as well. This limited availability is maybe OK for the physical version - they produce an amount and stop printing more because it is an anniversary thing. But stopping the sales on their digital shop is just outright a shitty practice. There is no way around that, this is outright AA-industry bullshit.

And as usual all this shitty industry bullshit isn't stopping people buying this. As they buy their FIFA and NBA2K each year, as they buy the games with all the microtransactions, full editions, season passes, lootboxes and whatever stuff else. This all hadn't people held back to buy these games filled with shady practices. So nobody should be surprised in the least, that Nintendo gets away with this shit, as every other companies does as well.
