BotW's Hyrule Castle is absolutely mindblowing.

That only depends on which path you're willing to take after leaving the Plateau. The game clearly gives you two main quests ("Destroy Ganon" and "Seek Out Impa") and the choice is yours over which one to follow, if any at all. I think most people just went in the direction they were pointed to at Kakariko, but certainly  a lot of people preferred to venture over Hyrule Field first (I know I did) and tried to get closer to the castle, in which case they would stumble upon a couple of stables on the way and find that quest.

Yeah, but 'very early in the game' is stretching it, if it is only is very early if yu take one of many paths (you could just as well ignore both objectives for the start).
