Short: Because it's fun.

Long: The points you describe are the same for me. Hyrule Warriors was my first Warriors-game. And it's actually a lot of fun. The braindead enemies are irrelevant, because the main thing in the game isn't hack'n'slay. You can take out thousands of enemies and still lose. Often I ignore these normal enemies completely and just run to the next point I'm needed. And that's the point here: it is more real-time strategy. You have to decide fast, which enemy commanders to take out, which keeps to conquer and so on. Often the level throws multiple objectives at you: the main stuff you should do, some sidestuff another character asks, calls for help from your commanders and many fortresses to conquer. Taking the right decisions decide about you winning or losing. And if you start mowing down thousands of brainless enemies, do it fast as you don't have time for it (in harder levels, in the beginning it isn't that difficult).

The game itself has OK quality, I wouldn't say it's a masterpiece, but as it gives you fun while playing it is worth it's money.
