The same reason why COD sells worse on Nintendo-consoles apply to Nintendo going third-party on PS360 or PS4/X1. The consumer-base for Nintendo-games weren't developed on these consoles, so the games would sell horrible. Also Nintendo often connects their games tightly with the input-scheme they thought out for the console - they have new ways to play the games with the new input-scheme. With the other consoles it would become a 'same-old, same-old' for these games. A few franchises might go a bit better (I assume Zelda might go this way and Metroid), but most would sell a lot worse (especially Mario).
Also all you 'Nintendo needs to be 3rd-party'-types forget about the handhelds. Nintendo could drop the WiiU and survive on 3DS alone. Basically the result would be better, as they cut the losses on the WiiU. but it would send a bad signal to consumers, so I think Nintendo will simply try to live through one horrible gen with the WiiU and try to do better in the next.
