They'll make more. They're not going to pass on an opportunity to make easy money.
But I just bought these GameCube controllers and have no adapter to test them on...

Really?
They probably want people to buy the Hori battle pads & such.
I'm considering getting one of those, but would rather have the 4 port adapter since I have 4 GC controllers.

Delay is a part of it, but the main reason is wireless interference. Tournaments with the 3DS version suffered greatly from it and are expected to die out shortly.

I think the production of accessories is different than that of games. But you could be right and they won't produce more adapters, which would be stupid on their part.
I meant to pre-order and didn't =
Oh well, I'm sure they will come out again, or like everyone mentioned I'll get a third party one once those come out!
