Man, all of them would. I remember playing "Bee Movie" on the 360. I thought to myself, "If Mario looked this good......."
Gameplay is always a priority, but the sense of impending doom in a Legend of Zelda dark world, the sense of awe in a Metroid overworld, the feeling of intensity in a Starfox game, or the water effects in a new Wave Race -the experience would be so much more immersive.
Not to mention what the folks at Nintendo could do with some awesome physics systems. I bet there would be some pretty amazing things going on with that wrecking ball in Twilight Princess if the Wii had some HD horsepower backing it up.
You're talking about power, right? Not just HD resolution?
Well, obviously Metroid Prime. That series is all about atmosphere and immersion and could benefit greatly from a visual upgrade.
I've playing been a lot of Assassin's Creed II lately. Any one of the main cities in that game have more detail than Twilight Princess' entire overworld times ten. So yeah, I'll say Zelda too.

Why would you want a photo-realistic world for Mario? Why would you try to create a cartoony world photo-realistic? For me it would desroy suspension of disbelief. Mario should never be a character in a world that tries to resemble the real world.

Well I wouldn't want Mario in a photo realistic world. But, despite the fact that I loved SMG (and I loved her better than you ever could!), there were a few time that I think the backgrounds would have benefitted from more animation, fantastical creatures, or larger scale. I mean, look at Ratchet and Clank or Little Big Planet on the PS3. Better graphics may not help, but it definitely wouldn't hurt.

You have a point, but you're ignoring certain things.
Making a game 1080p raises the price and development time. the only way that games like Fire Emblem can be made is because they have low development costs. If they were proper HD with good graphics, as described in the Op then the next game would be delayed 2 years and would be very unprofitable.

Heavy stylization ala Valkyria Chronicles could help allay that to some degree, I should hope.
