I'm suprised nobody said Donkey Kong yet. I mean I remember seeing him in the visually stunning Donkey Kong Country and thinking he looked amazing. Then in the 64 days I thought he looked amazing too, but then with the GameCube Donkey Kong looked even better, and now in Brawl you actually see his hairs and Diddy looked amazing. So bringing it to HD would add even more detail to everyones favorite Kong not to mention his buddies (Diddy,Rambi, Cranky...etc...etc..)
Then of course theirs Pikmin I remember the water effects in the first Pikmin stunning me. If Nintendo could place Olimar in a photo realistic world (Using HD) I'd wet myself.
But Nintendo has tons of franchises. Look at Pokemon sure Nintendo's been using the same character models since the 64, but if Nintendo set out they could really give Pokemon a massive graphics make over. Think Pikachu with actual hair texture instead of the plastic look he sports now. Or how about Scyther in photorealistic 1080?
Now some said Mario wouldn't be improved. I beg to differ. Sure you can't make a photo realistic Mario he is meant to be cartoony. However Nintendo could definatly make a photo-realistic world for him to be in. Just look at Sonic Unleashed or even the Adventure series, if Sonic can benefit from HD so can Mario!
In the end I think all of Nintendo's franchises could be improved with HD.

We can only dream that Factor 5 will return from the ashes and join up with Nintendo once again and put out an HD Rogue Squadron.
On second thought... screw Nintendo... put Rogue Squadron on the 360/PS3 NOW!!! Factor 5 would INSTANTLY be back in the black once again!

Metroid Prime and F-Zero are the most obvious ones. Even as old as it is, and in SD, F-Zero GX looks AMAZING. I won't even mention Metroid Prime, as we all know how the games in the franchise look!
well, on a Wii HD they might be able to realize a Pokémon MMO with a similar richness of detail as the movies, which would be totally awesome (and I can only hope those guys at Nintendo are already thinking about doing sth like that in the not so distant future)
None would benefit from HD graphics, as HD doesn't affect gameplay
