Final Fantasy VI, Baldur's Gate 2, Terranigma, Earthbound, Dragon Quest IX. I listed my top 5 since I have varied tastes.
Paper Mario and Mario & Luigi series: Humor, adventuring, involved combat, and action oriented.
Pokemon series: Adventuring, accessible, easy to learn & hard to master, lots of variety and tactics, Leafeon.
Gameplay Wise - Lufia 2. To me it's the best expression of what a game should be.
Story Wise - Parasite Eve. The best story in a video game ever, coming from Hideaki Sena's novel ;)

Love the story, battle system requires some thought but doesn't take as long as most SRPG systems, does funny and serious story sections really well (many RPG's have trouble pulling off both).

Disgaea: Hour/Afternoon of Darkness
Between the story, the gameplay that always feels fresh and the endless playability factor, there's really no better RPG out there.
I don't think any one RPG fills all my needs, but Disgaea comes the closest. It's probably because it's less an RPG and more of a strategy game though.
FFVIII for me, I love the quick ATB gauge.
Fallout 3 would probably be my favorite WRPG. The VATS system was awesome.
