And it's also possible that the series is highly cinematic, and that Square put it on the PS3 due to its graphical capabilities. The breakout title for the franchise was Final Fantasy 7, which was the first FF game in 3D and the first one with real cutscenes. They don't need the strongest system for the game, but they definitely wanted to have a big step up in quality. After pushing all they could out of the PS2, the Wii isn't as big of a step up as either of the HD consoles.
Final Fantasy is a mainstream franchise, and a company as big as Square-Enix won't want to make their largest franchise exclusive. Try thinking about it.
