Xbox exclusive 360 shooters:

Gears 1: 94%

Halo 3: 94%

Gears 2: 93%

Left 4 Dead: 89%

Call of Duty 2: 89%

PS3 exclusive shooters:

Killzone 2: 92%

Resistance 2: 87%

Resistance 1: 86%

So you can see the Xbox 360 is untouched in depth, and bredth of content in terms of shooters. The notable PS3 shooters can easily be substituted for a flavour of COD if you wish as they are more similar than the Xbox 360 examples.

Xbox 360 exclusive RPGs:

Mass Effect WRPG 91%

Fable 2 WRPG 89%

Tales of Vesperia JRPG: 81%

Blue Dragon JRPG: 79%

Lost Odyssey JRPG: 78%

Star Ocean IV JRPG: 78%

PS3 exclusive RPGs:

Valkyria Chronicles SRPG: 87%

??? I can't see any others.

Anyway even if I missed some, the Xbox 360 has a clear lead in WRPG type games and probably JRPG available in the west if I haven't missed any.

So if you don't intend to weigh each game individually then just from the variety I have to call the Xbox 360 the best lineup available at present in your chosen genres.
