So hard to say it has to be between.

Baldurs Gate, planescape Torment, Kotor, Fallout, gothic well one of them is, but they all great.

Oh Witcher is on my list too, but its not made by Bioware, its made by CD Projekt a Polish Dev Team, and they did a great job its really great mature non linear rpg, as good as fallout 3 which i thinks is simply amazing.
