Asides, Im lookin forward to Disaster's many wiimote exercises and from what i can see theres a shitload.

Metal of Honor Heroes 2 - tuning into radio frequencies, setting charges, using the rocket launcher, manning a turret

Zack & Wiki - I don't like this game but it's very well done.

Trauma Center - picking up and rotating bone fragments, cutting and removing tumors. There's a lot more but that's just to name a few.

Marble Mania is by far one of the best uses of the Wiimote, it's a shame no one has listed it.

PES was also amazing.....sports games with a pointer makes for genre changing game play controls..

Honorable mention to Pinballs Greatest Hits: The Williams Collection as well, it really feels like you are playing pinball.

Yeah Marble Mania is awesome, I wish they added more authentic looking marbles instead of the animals.

Have you played Mercury Meltdown?  That's another awesome but hard game.
