You know in KH1 in the fight with Sephiroth you can stop his instant death move in two ways. Firstly, yes the move actually will kill you in one hit if you do not have the Second Chance move equiped. Even with that, you still only have 1HP left after he does it. When you see him forming the spell for the move, ready your items. Have the cursor highlighting it when he does it. The second you see your HP hit 1, pop an Elixer on you. If you dont do it quick enough he will simply rush towards you and GameOver.

The second route is actually more dangerous but more useful. You can actually save your HP from being drained by busting out a Sonic Blade(the move that has you throw your keyblade). If you can time it just before Sephy can get the move done you can stop him from doint it. I found that was the only way to stop him from doing that.

And of course glide is essential in that battle. You will have a really hard time if you dont have glide to quickly evade Sephy's moves and his damn meteor shower.

The item technique you list above is how I beat him, or survived at least, glide is also essential.
