An the environments would be considered physics. Seriously there aren't too many PS360 games were the environments can't be done on the wii(with less graphics features).

Physics definitely has relevance to gameplay. The platforming genre defines this. I don't need to know the vector acceleration of every particle to have fun with the physics of Super Mario Galaxy though.

I'm not confusing anything its probably you... Have you played Uncharted? If you did you would know that when he swims his clothes get wet. This is forsehadowing that the pysical environment will play a role in the game, and later on the gameplay.

I change the decisions I make because of another weapon. Being wet (I assume) will not change what I do.

That is a shallow addition as well, but much less so then getting wet. What am I able to do when wet? With a new weapon I could change the focus of my attacks.
