If that's really the case, then you're most of the way there. Electrically, the XBox controllers were USB; they just had a funny connector shape. Given this, I wouldn't be surprised to find a USB-to-XBox connector out there, and if such a thing exists then you're golden.

Why not crack up an old Game cube controller, take out the electronics etc and stick into a shell of a XBOX 360 controller? So basically on the outside it will have the vanear of a Xbox controller but internally will be a Gamecube controller.

Because it won't fit right. The layouts don't match at all.

I've also found this, but it only comes in PS/2 (instead of USB Ports), and while I have a PS/2 to USB Conversion cable, it has 2 separate ones for the "mouse" and "Keyboard", so I'm not sure if it would work:

The thing is that the 360 controller is missing a Z button stand in. Other than that everything should be fine.

Hm... why wouldn't one of the bumpers on the 360 controller work as a Z stand-in? I could always configure Z to one of the Shoulder or Face buttons (in SSBB's custom controls), but I just don't understand why it wouldn't work. 

Wouldn't it carry the "Right Bumper" signal as a "white/black button"(XBOX) signal, to the PS2 Controller as a "R1 Trigger", and then carry THAT to the GC port as a "Z trigger"?
