I bought 2 switch 2 upgrades: Xenoblade Chronicles 2 and Zelda Tears of the Kingdom, Breath of the Wild I bought the full switch 2 physical version, because I have the Wii U and Switch 1 version (both physical), so I completed my collection :)

I've had to cutback on what games to get, but I've only been getting physical. So far, I've gotten Donkey Kong Bananza, Mario Kart World, Marvel Cosmic Invasion, Yooka Replaylee, Star Fox, and Pokémon Pokopia.
As far as games I plan on getting: Splatoon Raiders, Orbitals, Zelda Ocarina of Time, Rayman Legends Retold, Spyro: A Realm Beyond, and the Toy Story Collection

I think your list is badass!
I've been focusing mostly on Switch 2 exclusives (including console exclusives) and I'm still falling behind. Nintendo's steady stream of releases is a blessing and a curse.
But I'm committed. I waited to buy/play a lot of Switch 1 games, and ended up with an insurmountable backlog. With Switch 2, I've been buying games at launch to make sure I stay current. It's been more expensive, but it allows me to experience the full library. August and September are going to push me to my limit, though.

Have you thought about Moonlight Peaks? It's on PC/Switch 2/Switch. It has a lot of Story of Seasons DNA in it.

Mario Kart World, Donkey Kong Bonanza, Metroid Prime 4, I also played through BOTW Switch 2 upgrade. I think that's it for Switch 2 specific games, still playing plenty of Switch 1 games. Will probably get Zelda Ocarina of Time, Star Fox, and Fire Emblem Fortunes' Weave for Christmas. May add Splatoon Raiders at some point as well given how great the reviews are. There are a few third party games I may pick up, depending on where it's cheaper when I decide to get them. Games like Dragon Quest 7 remake, RE Requiem, and the Adventures of Elliot.
Not as many as I should, but then again I am very selective. i dont pick up a game simply because it is for the platform. I pick up the ones i know i am going to play. And seeing as many NS2 games are also on the NS1... I will often times just get the NS1 version unless its something that truly utilizes the power of the NS2. The ones I do have on NS2 do not have an NS1 version, so there is that. In total, only 5 right now. Star Fox, Yoshi Mysterious Book, Truxton Extreme, Metroid 4 (yes i know that it on NS1, but i wanted the NS2 version) and Fast Fusion.
I still have yet to get DK Bananza and MK World. Oh yeah, forgot about upgrades to existing games... so then add in the Sonic Crossworld Racing.
