You forgot Cursed Castilla Ex. Fun game.

Oh yeah, also remember Unepic, could tell it was Spanish due to its humour. Did some Googling, and got to this reddit post.

Was about to mention Unepic, one of my  favorite games on the Wii U and Switch. I wish to see the Spanish version once I understand the language better, as I understand many jokes and references had to be cut in the English version due to copyright and trademark reasons.

Severance: Blade of Darkness (AKA Blade of Darkness, AKA Blade: The Edge of Darkness)

Action-adventure from 2001 with 4 different starting character/classes, proto-Souls so to speak, albeit without respawn mechanics, but with similar approach to level design, dark atmosphere, stamina based combat, breaking shields, chopping off hands and legs (then picking them up to bash the enemy with them), enemies accidentally hitting each other, and generally extremely engaging combat.

I've only played original, with keyboard commands, not easiest to master, but once you do, you can pull off some spectacular things. I have to try re-release, to see how it translates to gamepad.

Studio behind Metroid Dread, which was founded by folks who made Blade of Darkness, is currently working on a sort of spiritual successor, Blades of Fire.

Of course, this can't go without mentioning Commandos: Behind Enemy Lines, the game that made a template for stealth oriented real time squad based tactics.

Man I need to find time to play Metroid Dread sometime.

Voted GRIS simply because I really love the art style.

I'll have to pass this one, I simply can't find a single Spanish game I've played.

Metroid Dread by MecurySteam ....

Welp that was easy.

You wouldn't go wrong by picking the Blasphemous games however.

Or Gris.

Anywoo, Spain devs should be more recognized in the VG industry for the work they bring in honestly.

Other: Nihilumbra. It didn’t review as well as I thought it would, but I enjoyed it.
Not an amazing must play game, but it’s the Spanish game I remember enjoying.
