DOOM on SNES - sure, it looks and runs a lot worse than PC game and it runs on SuperFX2, while original SNES hardware barely does anything, but it gave a lot of console players who haven't moved at the time onto first 3D console generation glimpse into what's to come.

Perfect Dark for Game boy color did some technical things like voices. Did not feel like it should have been possible on that hardware.
Donkey Kong Country on SNES is the only one that I can think of. That might be the only one. Although there were some things that shocked me, like how 3D popped on 3DS (I was thinking it would be more of a depth trick) and the water effects on early N64 games.

Horizon Forbidden West
I'm surprised it runs on PS4, looks very demanding even for a PS5
Zelda Link’s Awakening on Gameboy.
Except the color and the control scheme, the game had more going on than its console brother ALttP.
Some of mine:
Solaris, Atari 2600
Pseudo-3D flight combat and a large explorable map would be ambitious by SNES standards; doing it on a freaking 2600 is madness, yet somehow, incredibly, it works.
Doom, SNES
Playing a PC showpiece on an ageing 16-bit console was downright surreal.
Resident Evil 2, N64
The original game took up two CDs; that they got it to fit on a 64MB cart while retaining the pre-rendered cutscenes, something hardly ever seen on the system due to storage limits, feels like a miracle.
Doom 3, Xbox
Like it's predecessor, another case of a game that pushed PCs hard somehow making the transition to much weaker console hardware.
Call of Duty: Modern Warfare 3, Wii
The original game was a late gen AAA PS3/360 game, something that had no business working at all on the overclocked Gamecube hardware of the Wii, but the devs made it happen.
