That indeed sounds like the number one third-party IP to jump into PlayStation for.

The FF7 Remake is console exclusive to PlayStation so far, and there are some other console exclusive games as well.

Looks like Microsoft is going all in on PlayStation ports.

Starfield, Halo, Indiana Jones all rumored to be coming. Its looking like the whole slate lol.

I think this works out well for PS owners as they have more software options. Works out well for MS too since they can now sell to a larger audience.

Personally, unless the games are going to be on PS Essential, it's a non-factor for me. Even Minecraft Dungeons, which I really enjoyed, is not something I'm willing to pay anything more beyond a PS Essential subscription for.

The only exception might be Forza Horizon, but only cause my sibling loves the game and I'd love to cross-play with them on a game they enjoy.

Ironically, the only downside is Xbox owners get shafted lol. 

In terms of late ports, outside of a few major IP's like Doom and Fallout, F2P games like Halo Infinite, or a surprise remaster like Sunset Overdrive, I'm more than willing to wait for a sale. I will say though, Starfield might be tempting as a Day One buy, depending on the content/improvements to the PS5 version.

The Gamepass business models means MS can't sell games on their platforms, and the service has been missing growth targets every quarter. They need to sell games somehow, notice how ABK games GP drop isn't being talked about at all. (Hilarious since many has been pointing at SONY's model as an example of unsustainability). 

Another major acquisition (multiple?) will be announced sooner or later. A preemptive move by MS to appease regulators is another likely scenario here, especially when Xbox Series is beyond saving at this point, you might as well make take advantage of this and acquire more studios while adopting a multiplatform strategy for now. 

Then you have the war on "Gatekeepers", closed platforms and the possibility of third party stores on competing hardware, which is the endgame imo.

Currently playing GT7 with PSVR2, 20min a day to get the marathon bonus and do the weekly missions while burning through the new content. It is just fantastic even with controller, top notch immersion (unfortunately my wheel only work on PS4 version, even when playing on PS5 it works, but if I try to play the PS5 version it doesn't work).

Also playing Yakuza 8 and it is fantastic, starts a little slow though, and have some small portions I didn't like much, but overall loving it. Put like 8h only on the Dondoko Island minigame also probably put 5h or so on the Sujimon mechanic all things told.
