RE7 and RE8 suddenly come to mind.
You're always moving forward to a nice, tight conclusion. Every moment is either preparing you for something upcoming, or helping you recover from a moment that just took you to the limit. Any time spent going "off the beaten trail" ends up with a satisfying reward.

And I mentioned Gears of War 2006, earlier. The series gets a bad rap for being mindless dumb fun but few games have the pacing that this game (and really, this series) has. Quiet moments of reflection and world building with little battle sprinkled throughout. And then you have these small skirmishes that slowly build and build, upping the ante in ways you never expect. A couple of games in the series (Judgment and Gears 4, to be specific) lost focus and mindlessly throw too much at you but the rest of the series is a masterclass in pacing--and none do it better than the first.



Around the Network

The Goldeneye 007 Wii-imagining is another great example of a game that flows well from one scene to the next without ever either getting boring or becoming too rushed and unfocused. It knows when to give you a breather, but always maintains forwards momentum.



The Last of Us is very well paced.
