Let me surprise you: they're not. Even from this crappy video you can see that polygon count, textures and draw distance are better in the Wii version. The GC game has a blur over it, while the Wii game is sharp.
Peach Beach is also easily one of the least impressive tracks in MKWii.
I already had loads of fun with this game online with several VGC members, so for me this is already the best 3D Mario Kart (nothing can beat the SNES version though). So bash the graphics as much as you like, I'm pretty sure there's no online experience as pure fun as MKWii on any console.

Hey some people believe that if a company advertise on your site it's proof of a blatent bias. And some people believe that the differnce between a 50,000 poly sphere and 5,000,000 poly sphere in terms of visual quality is 100 times. And some believe that having the best selling product in your industry does not make you influential. And some believe that opening your industry up to a new demographic through innovative technology is not a positive thing. And some believe that comparing the orginal Donkey Kong to the Donkey Kong emulation of the original game in Donekey Kong 64 is proof that the N64 was not more capable then the NES and that DK64 was graphicly horrable.

The video is too small to say anything certainly, but it doesn't seem like there's much of a difference.
However, aren't levels from the Gamecube MK left unaltered for the Wii version? I imagine that original levels would look much better.
Honestly, the Gamecube version looks sharper, which is quite embarrassing.

The Wii version doesn't actually blur the graphics. If you look closer, you can see this is a deliberate effect. So the GC version look sharper, but there is a reason for this, not a failure of the graphics.
A flashy-first game is awesome when it comes out. A great-first game is awesome forever.
Plus, just for the hell of it: Kelly Brook at the 2008 BAFTAs
Just wait to see the game in motion people; blurring and lighting make quite a difference. Textures are a bit mediocre though.
