A game that is concentrated around architecture. A city-builder where you could also design how the buildings look. And there could be different eras (antique, present-day, future).

"The rumours of my death have been greatly exaggerated."

- Single-player Game

It's not a video game, but if you don't mind boardgames Viticulture Essential Edition (or Viticulture with Toscany Expansion) is fantastic worker placement game about vineyards and wine.

Why has nobody tried to make a fast-running character to rival Sonic? I'd love to see a different take on that concept.

Shadow

Also freedom planet, but generally Sonic isn't really in a competitive market. Even with Sonic, he was meant to rival Mario

Not a full game, but World Games on the C64 and various other platforms had a Sumo event.

Not enough people globally want games based on those things.

I've noticed that, out of the nearly endless video games released to this day, there are some things that haven't really gotten much representation in video game form.

I don't know of any notable games about sumo wrestling, lacrosse, badminton, midget car racing, being a teacher, psychiatry or wine making. If anyone here knows of specific games about any of those, please tell me.

What are some subjects/topics that you don't think have had their own video games, or at least not many game about them?

Sumo wrestling

I played that in World Games (Epyx) on the C64:
