Then you should know the Ultra in the name is referencing the Ultra Beasts which Sun and Moon introduced, and these games deal more with that world and beasts than Sun and Moon.

As for your Mega Sun and Mega Moon comment. Hey, Mega X and Mega Y games woudl have made sense, since such as this game deals with Ultra Beasts, X & Y dealt with Mega stones and Mega Pokemon. So it would have been a fine name to use Mega X or Mega Y for game names. Though the fact they had some pokemon have a Mega X and Mega Y form, it wouldn't have been as neat, but still.
