PS1:

Final Fantasy IX - The best game ever made as far as I'm concerned, so obviously it's the best game on the platform as well. Great story, characters, music and world.
Honorable mentions: The Legend of Dragoon, Tekken 3, Final Fantasy VII and VIII, Grandia

PS2:

Shadow of the Colossus - Much more difficult pick, as there are so many great games on the PS2 that I consider more or less equals.
Honorable mentions: Final Fantasy X and XII, Metal Gear Solid 3, Kingdom Hearts 2, Okami, Dragon Quest VIII, Persona 4

PSP:

Crisis Core: Final Fantasy VII - I haven't actually played that many games on PSP. Handheld gaming just never appealed to me that much, even if did go out and get the system anyway. Then I mostly just played rereleases of older games like Breath of Fire III. Of the game I have played, Crisis Core is probably the best.

PS3:

Dark Souls - My favourite game of the generation overall. Everything about the game is just flawless. Dark Souls is a game that doesn't lower its standards for players, but expects you to measure up to the bar that it sets.
